  • 6 lb. beaver
  • 1 Tbsp. pickling spice
  • 3 to 4 c. water
  • 3 Tbsp. shortening
  • garlic salt
  • 1 (1 pt.) bottle hickory smoked barbecue sauce
  • 1 1/2 Tbsp. Lea & Perrins
  • 1 large onion

Directions

    Wash beaver and boil with pickling spices for 30 minutes. Take meat out of water and place in baking pan.

    Slice up onion and place over meat.
  3. 3
    Salt, pepper and garlic meat.
  4. 4
    Bake 1 hour at 350°, stirring occasionally.

    Then take barbecue sauce, Lea & Perrins, mix together and pour over meat.

    Bake 1 1/2 more hours at 300°.
