- salt and pepper to taste
- vinegar
- 4 to 5 tsp. prepared mustard
- barbecue sauce
Directions

1Sprinkle alligator with vinegar and then roll in the mustard, salt and pepper.

2Let stand for 1 hour.

3Barbecue on low fire without basting for about 1 hour.

4Butterfly fillet by slicing in half and placing the outside down.

5Baste inside with your favorite barbecue sauce and cook until done.
