  • 1 tablespoon vegetable oil
  • 2 teaspoons vegetable oil
  • 2 cups potatoes, diced into 1/2 inch pieces
  • 12 cup yellow onion, thinly sliced
  • 14 teaspoon kosher salt
  • 14 teaspoon pepper
  • 12 cup barbecue sauce
  • 14 cup green onion, sliced thin and green part only
  • 1 teaspoon oregano, dried
  • 2 eggs
  • 2 (10 inch) tortillas

    Heat oil over medium heat in a nonstick skillet large enough to hold all of the potatoes in a single layer.

    Add potatoes and yellow onion.

    Season with salt and pepper.

    Cook until crispy on all sides-about 8-10 minutes,stirring frequently.

    Reduce heat and cook until tender when pierced with a fork,5-10 minutes.

    Remove from heat.

    Put the potatoes in a mixing bowl and add barbecue sauce,green onion and oregano.

    Srir to coat.

    Return skillet to he stove,add remaining 2 teaspoons of oil and heat over medium heat.

    Crack the eggs into the skillet and season with salt and pepper.

    Cook over high heat for 2 minutes or until just whites are cooked.

    Remove from heat.

    Divide the potatoes between the two tortillas and place one egg on top,sunny side up and wrap.
