- 2 tablespoons salt
- 1/4 cup sugar
- 2 tablespoons cumin ground
- 2 tablespoons black pepper
- 2 tablespoons chili powder
- 4 tablespoons paprika
- 2 each pork ribs
- 1 3/4 cups vinegar
- 2 tablespoons red hot pepper sauce
- 2 tablespoons sugar
- 1 tablespoon salt
- 1 tablespoon black pepper
Directions

1Combine salt, sugar, cumin, pepper, chili powder and paprika to make barbecue rub.

2Rub ribs thoroughly with this mixture.

3Place ribs on baking sheets and cook in 180 degrees F. oven for 3 hours.

4Do not turn; slow cooking infuses spices.

5Remove from oven.

6Use very low charcoal fire with rack set as high as possible.

7Grill ribs 5 minutes to 30 minutes per side, depending on heat and temperature of ribs.

8Ribs should have light outer crust and be heated throughout.

9If you prefer juicy ribs, coat with basting sauce just before removing from grill.

10Otherwise serve dry with sauce on side.

11Remove ribs from grill, cut in between bones and serve.
