Barley Bean Soup

Ingredients

  • 1 c. dried lima beans
  • 3 meaty beef neck bones
  • 1 onion
  • 2 sprigs fresh parsley
  • 2 sprigs fresh dill weed
  • 1/2 c. pearl barley
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 bay leaves

Directions

    Soak dried lima beans for a few hours or overnight.

    Drain and add 2 quarts of water in a heavy saucepan.
  3. 3
    Add neck bones, onion, parsley, dill weed, barley, salt, pepper and bay leaves.

    Bring to a boil and then turn the heat low and simmer for 2 hours or until beans and meat are tender.

    Remove bones and cut up chunks of meat.

    Return meat to the soup.

    Remove bay leaves.

    Chill and remove solidified fat.

    Reheat when ready to serve.
