Barley Bean Soup

Ingredients
- 1 c. dried lima beans
- 3 meaty beef neck bones
- 1 onion
- 2 sprigs fresh parsley
- 2 sprigs fresh dill weed
- 1/2 c. pearl barley
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 bay leaves
Directions

1Soak dried lima beans for a few hours or overnight.

2Drain and add 2 quarts of water in a heavy saucepan.

3Add neck bones, onion, parsley, dill weed, barley, salt, pepper and bay leaves.

4Bring to a boil and then turn the heat low and simmer for 2 hours or until beans and meat are tender.

5Remove bones and cut up chunks of meat.

6Return meat to the soup.

7Remove bay leaves.

8Chill and remove solidified fat.

9Reheat when ready to serve.

10Makes 10 servings.
