- 2 whole chicken breasts, split for 4 servings and cooked
- 1 c. barley (regular or quick cooking)
- 2 Tbsp. butter or margarine
- 2 cans French onion soup
- 1 (8 oz.) pkg. (or less) fresh mushrooms, sliced
- 1/2 c. golden raisins (optional)
- chopped fresh parsley (optional)
- 1 can water chestnuts, sliced (optional)
Directions

1Cook chicken breasts in water to cover.

2Bone and cut meat into bite-size pieces.

3Reserve broth for later use.

4Brown barley in butter or margarine.

5Add French onion soup and sliced mushrooms.

6Cover and cook on stove top at low heat until barley has absorbed liquid (about 30 minutes for quick-cooking barley; longer for regular barley).
