Ingredients
- 1 1/4 c. pearl barley, soaked overnight
- 3 Tbsp. olive oil
- 1 c. yellow onion, minced
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 1/2 c. beef broth
- 2 Tbsp. fresh parsley, chopped
- 1/2 tsp. freshly grated nutmeg
Directions

1Drain the barley, then saute it in olive oil for 5 minutes over medium-high heat with the onion.

2Add salt, pepper and beef broth.

3Cover and bring to a boil.

4Reduce to a simmer and cook 30 to 45 minutes or until barley is just done.

5Don't overcook or the barley will lose its nutty flavor.

6Add parsley and nutmeg.

7Toss and serve.
