- 1/2 lb. mushrooms
- 1/4 lb. butter
- 2 medium onions, chopped
- 1 3/4 c. pearl barley
- 4 c. chicken broth
Directions

1Saute mushrooms and onions in half of the butter.

2When tender, place in casserole.

3Cook barley in remaining butter over low heat, stirring constantly, until almond colored.

4Add to ingredients in casserole and mix together.

5Pour broth over all and bake for 1 to 1 1/2 hours at 350°.

6Cover for first half of cooking time.
