- 3/4 c. pearl barley
- 8 c. stock
- 1/2 c. butter
- 2 c. onions, chopped
- 2 carrots, chopped
- 4 Tbsp. sour cream
- 1/2 c. celery, chopped
- 2/3 c. mushrooms, sliced
- 1 tsp. salt
- 1/8 tsp. pepper
Directions

1Simmer barley in 1/2 of stock until tender.

2Add butter gradually.

3Boil chopped vegetables until tender in remaining stock, then add cooked barley and seasoning.

4When ready to serve, add sour cream.

5Serves 6.
