Barley Soup

Ingredients
- 3/4 c. small lima beans
- 4 qt. water
- 1 1/2 lb. chuck soup bone
- 1 c. celery (include leaves)
- 1 chopped onion
- 1 c. sliced carrots
- 1 c. diced potatoes
- 1/2 c. pearl barley
- salt and pepper to taste
Directions

1Place lima beans in mixing bowl.

2Cover and soak overnight. In large soup pot, place soup bone, celery, onion and enough water to completely cover bone.

3Season with salt and pepper.

4Bring to boil; reduce heat and simmer until meat is very tender.

5Remove bone from soup pot and cut off all edible meat from the bone; return meat to pot.

6Discard bone and membranes.

7Drain beans and add with remaining ingredients to pot.

8Adjust water to make 4 quarts of soup.

9Season with salt and pepper.

10Cover and simmer 5 or 6 hours.
