Basgne Fish Soup

  • 1 c. chopped onion
  • 1/2 c. chopped celery
  • 2 cloves garlic, crushed
  • 2 Tbsp. butter or margarine
  • 2 (16 oz.) cans Italian tomatoes
  • 1/2 c. dry white wine
  • 1/2 c. minced parsley
  • 1/4 tsp. thyme
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 lb. frozen fish fillets, thawed or partially thawed and cut in 1-inch chunks

Directions

    In large saucepan or pot, saute onion, celery and garlic in butter or margarine.

    Cut up tomatoes and add to pan with wine, parsley, salt, pepper and thyme.

    Cover and simmer 30 minutes. Add fish and simmer 7 to 10 minutes or until fish flakes easily with a fork.

    Sprinkle with extra parsley and serve with green salad and crusty bread.

    Makes 4 to 6 servings.
