Basic Baked Cheesecake

- 200 grams Cream cheese
- 70 grams Sugar
- 2 Eggs
- 150 ml Heavy cream
- 1 tbsp Lemon juice
- 3 tbsp Cake flour
Directions

1Bring the cream cheese to room temperature.

2I always use this brand of cream cheese.

3Preheat the oven to 180C (356 F).

4Whisk cream cheese and sugar until it has a cream-like consistency.

5Break in the eggs and mix with each addition.

6Add heavy cream and mix.

7Add lemon juice and mix some more.

8Add flour and mix, making sure it doesn't become lumpy!

9Pour the batter into the mould and drop it onto the counter once or twice to remove any air.

10Bake it at 180C (356 F) for 35-40 minutes.

11It's done!

12It's crumbly when just baked, so let it cool before you take it out of the mould.
