Basic Banana Pudding

- 1/3 c. flour
- 2/3 c. sugar
- 2 c. milk
- 2 eggs, separated
- 1/2 tsp. vanilla extract
- 1 small box vanilla wafers
- 3 to 4 sliced bananas
- 1/4 tsp. cream of tartar
- 1/4 c. sugar
Directions

1Combine flour and 2/3 cup of sugar in saucepan.

2Mix well. Stir in milk and slightly beaten egg yolks.

3Cook over medium heat, stirring constantly, until mixture thickens.

4Cover bottom of an 8-inch lightly greased (spray with cooking spray) baking dish with a layer of vanilla wafers.

5Top with half the bananas and half of the pudding.

6Repeat layers, ending with pudding. Beat egg whites until soft peaks form.

7Add cream of tartar, then gradually the sugar, continuing to beat until whites hold a peak but are not dry.

8Spread evenly over pudding, sealing to the edge of the baking dish.

9Bake at 350° for 10 to 15 minutes or until golden brown.
