Basic British Sausage Recipe

- 1 lb Lean pork, such as shoulder
- 8 ounce Pork fat Salt and pepper
- 1 1/2 ounce Fresh breadcrumbs Nutmeg, grnd cloves Mace, thyme Egg yolks Sausage skins
Directions

1Mince the lean pork and pork fat finely.

2Season generously with salt, pepper, and at least a healthy pinch each of nutmeg, cloves, mace and thyme.

3Add in the breadcrumbs and egg yolks and mix well.

4Chill the mix to make it easier to handle, then stuff into the skins and twist to secure the ends.

5If sausage skins are not available, coat with egg and dry breadcrumbs.

6Serve grilled or possibly fried.
