- bare bones (not meaty soup bones, ask butcher for fresh rendering bones)
- yellow onions
- carrots
- chopped celery
Directions

1Place bare bones in a roasting pan, and roast at 425°, without lid, for 2 hours.

2Place the roasted bones in a large soup pot. Add unpeeled vegetables: chopped celery, yellow onions and carrots.

3(Yellow onion skins give color to stock.)

4Bring to heavy simmer and cook for 8 hours.

5Strain stock and store.
