Basic Brunswick Stew

Ingredients

  • 3 lb. chicken (breast)
  • 3 c. water (more as necessary)
  • 1 1/2 tsp. salt
  • 1 c. potatoes, diced
  • 1 small box frozen baby lima beans
  • 15 oz. can tomato sauce
  • 1 c. onion, chopped (4 Tbsp. minced)
  • 1 small box frozen corn
  • sugar to taste (2 Tbsp.)
  • salt and pepper
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1/4 tsp. cayenne pepper
  • 1/2 to 1 c. white wine

    Simmer chicken in a large pot with water and 1 1/2 teaspoons salt until tender.

    Drain broth and save.

    Remove chicken bones and skin.

    Cut chicken into small bite size pieces.

    Skim fat from broth.

    Return broth to pot.

    Bring to a boil.

    Reduce broth to 2 cups, but save remainder.
