Basic Cauliflower Fried Rice

Ingredients
- 1 pound cauliflower florets 1 head of cauliflower
- 4 each scallions, spring or green onions
- 1 medium yellow onion
- 3 cloves garlic
- 1 x ginger thumb sized piece of ginger (or more if you want a stronger ginger flavor)
- 4 tablespoons soy sauce, tamari or coconut aminos
Directions

1Place flowerets of cauliflower into food processor (little bit at a time).

2Pulse until size of rice.

3Pour into large bowl and put aside.

4In food processor, combine onions, garlic, ginger, and whites of the green onion.

5Pulse until well combined.

6In a large pan, heat coconut oil.

7Add processed onions, garlic, ginger and whites of green onion.

8Saute until fragrant and onions are transparent.

9Add processed cauliflower and stir until well combined.

10Let cook for about 5 minutes, stirring occasionally.

11Add Tamari and mix well.

12Allow to cook for another few minutes, stirring occasionally.

13Remove from heat and top with sliced green onions.
