Basic Cheese Sauce Recipe

  • 2 tbsp. reduced calorie butter
  • 2 tbsp. all purpose flour
  • 1 c. skim lowfat milk
  • 2 slices low fat process American cheese, torn into sm. pcs
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper

Directions

    Heat butter in a heavy saucepan over low heat; add in flour, stirring till smooth (mix will be dry).

    Cook 1 minute, stirring constantly.

    Gradually add in lowfat milk; cook over medium heat, stirring constantly with a wire whisk, till thickened and bubbly.

    Add in cheese, salt and pepper; stir till cheese melts.

    Serve sauce over broccoli or possibly other vegetables.

    Yield: 1 c., about 20 calories per Tbsp..

    NOTE: One Tbsp.

    regular butter may be substituted for 2 Tbsp.
