- 2 tbsp. reduced calorie butter
- 2 tbsp. all purpose flour
- 1 c. skim lowfat milk
- 2 slices low fat process American cheese, torn into sm. pcs
- 1/4 teaspoon salt
- 1/8 teaspoon white pepper
Directions

1Heat butter in a heavy saucepan over low heat; add in flour, stirring till smooth (mix will be dry).

2Cook 1 minute, stirring constantly.

3Gradually add in lowfat milk; cook over medium heat, stirring constantly with a wire whisk, till thickened and bubbly.

4Add in cheese, salt and pepper; stir till cheese melts.

5Serve sauce over broccoli or possibly other vegetables.

6Yield: 1 c., about 20 calories per Tbsp..

7NOTE: One Tbsp.

8regular butter may be substituted for 2 Tbsp.
