- 2/3 c. sugar
- 3 Tbsp. cornstarch
- 2 c. milk
- 3 beaten egg yolks
- 1 tsp. vanilla
- 1 Tbsp. butter
- salt
Directions

1Combine sugar and cornstarch; add milk gradually and stir until smooth.

2Cook, stirring until thickened.

3Add small amount hot mixture to egg yolks; blend well.

4Return to hot mixture. Cook until thickened, stirring over medium heat.

5Remove from heat.

6Blend in vanilla, butter and salt.

7Cool 15 to 20 minutes. Add coconut or bananas to the pudding at this time.

8Pour into baked pie shell.

9Top with meringue.
