Basic Creamy Dressing

Ingredients

  • 13 cup extra virgin olive oil
  • 3 tablespoons white wine vinegar, more to taste
  • 3 tablespoons sour cream (see recipe description)
  • 1 teaspoon Dijon mustard
  • 1 small shallot, rough chopped
  • salt & freshly ground black pepper

Directions

    Combine all ingredients, except shallot, in a blender and process until emulsified, about 30 seconds.

    Taste and add more vinegar by teaspoons, if desired.

    Add shallot and process, by turning on and off, until minced.
  4. 4
    Taste and adjust seasoning.
