- 13 cup extra virgin olive oil
- 3 tablespoons white wine vinegar, more to taste
- 3 tablespoons sour cream (see recipe description)
- 1 teaspoon Dijon mustard
- 1 small shallot, rough chopped
- salt & freshly ground black pepper
Directions

1Combine all ingredients, except shallot, in a blender and process until emulsified, about 30 seconds.

2Taste and add more vinegar by teaspoons, if desired.

3Add shallot and process, by turning on and off, until minced.

4Taste and adjust seasoning.
