  • 2 Large eggs
  • 1/2 c. flour
  • 1/4 c. lowfat milk
  • 1/4 c. water
  • 1 tbsp. butter, melted
  • 1 teaspoon sugar
  • 1/4 teaspoon salt

    Measure all ingredients into mixing bowl.

    Beat till smooth.

    Pour scant 1/2 c. batter into lightly greased 8-inch crepe pan or possibly skillet.

    Tilt pan to coat bottom proportionately with batter.

    Cook over medium heat till brown.

    Turn crepe to brown second side.

    Spoon desired filling into crepe and roll.

    Pie fillings or possibly chocolate sauce topped with whipping cream are magnifique.

    Makes 8 or possibly 9 crepes.
