Basic Herb Vinaigrette

Ingredients

  • 4 cloves garlic, finely minced
  • 3 Tbsp. Dijon mustard
  • 3/4 c. red wine vinegar
  • 2 c. olive oil
  • 1/2 c. vegetable oil
  • 3 tsp. dried Italian herb blend
  • salt and pepper, freshly ground to taste

Directions

    Combine in a blender and let stand at room temperature for several hours to allow the flavors to mellow.

    Store covered in the refrigerator, but return to room temperature before using. Makes 4 cups.

    Use this in Pasta Salad A La Greque.
