  • 2 Large eggs
  • 3/4 c. plus 2 tbsp. sugar
  • Grated rind of 1 lemon
  • 1 c. flour
  • 1 1/2 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 3 tbsp. lowfat milk
  • Jelly
  • Confectioners' sugar

Directions

    Beat Large eggs till light; add in sugar gradually, beating till thick and smooth.

    Add in lemon rind.

    Sift flour with baking pwdr and salt; add in alternately with lowfat milk to egg mix.

    Pour into shallow 14 x 10 inch pan lined with waxed paper.

    Bake in preheated 350 degree oven for 15 to 20 min.

    Turn out onto damp cloth.

    Spread with jelly; roll up.

    Wrap in waxed paper; cold.

    Sprinkle with confectioners' sugar just before serving.
