Basic Low Fat Scones Recipe

- 3/4 c. Unbleached white flour plus extra for rolling dough
- 1 tsp Baking pwdr
- 1 tsp Granulated sugar
- 1/4 tsp Baking soda
- 1/8 tsp Salt
- 3 Tbsp. Butter
- 1/4 c. Low-fat small-curd cottage cheese
- 2 Tbsp. Low-fat buttermilk
Directions

1Preheat oven to 425 degrees.

2Into large bowl, sift together 3/4 c. flour, baking pwdr, sugar, baking soda and salt.

3Sift mix again.

4Add in butter; mix just till crumbly.

5Add in cottage cheese.

6Add in buttermilk and combine briefly, just to mix ingredients.

7Knead only 5 times.

8(Dough should be soft and satiny.)

9Lightly flour board.

10Roll out dough into 8- by 5-inch rectangle.

11Cut into rounds with 2-inch biscuit cutter, rerolling and cutting scraps.

12Place on oiled baking sheet.

13Bake 7 to 10 min, till just golden brown.

14Yields 10 to 12 scones.
