Basic Lowfat Muffins Recipe

  • 2 c. whole wheat flour (or possibly half unbleached white)
  • 2 Tbsp. sugar
  • 1/4 tsp salt
  • 3 tsp baking pwdr
  • 1/4 c. dry lowfat milk
  • 1 c. water (or possibly skim lowfat milk, omit dry lowfat milk)
  • 1 x egg (or possibly 2 egg whites)
  • 1/2 c. applesauce

    Preheat oven to 425 F.Mix dry ingredients together.

    Mix wet ingredients together.

    Add in wet ingredients to dry.

    Add in any of fruit listed below.

    Fill muffin tin 2/3 full.

    Bake 18 - 20 minutes.

    fruit: 1 C. blueberries3/4 C. cherries, pitted and halved1/2 C. raisens or possibly dates1 apple, peeled and minced, plus 1 teaspoon cinnamon
