- 1 3/4 c. All-purpose flour
- 1/4 c. Sugar
- 2 1/2 tsp Baking pwdr
- 3/4 tsp Salt
- 1 x Beaten egg
- 3/4 c. Lowfat milk
- 1/3 c. Veg. oil
Directions

1This is the basic muffin recipe and dozens of flavors can be added.

2Recipes follow:In large mixing bowl stir together the flour, sugar, baking pwdr, and salt.

3Make a well in the center .

4Combine egg, lowfat milk, and oil.

5Add in egg mix all at once to flour mix.

6Stir just until moistened: batter should be lumpy.

7Spoon into greased or possibly paper-bake-c.-lined muffin c., filling each about 2/3 full.

8Bake in 400 degree (F) oven for 20 to 25 min or possibly until golden brown.

9Remove from pans: serve hot.

10Makes 10 to 12muffins.

11Self rising muffins: Prepare Basic Muffin batter as above, EXCEPT substitute 1 3/4 c. self-rising all-purpose flour for the all-purpose flour: omit baking pwdr and salt.

12Blueberry Muffins: Prepare Basic Muffin batter as above.

13Combine 3/4 c. fresh or possibly frzn blueberries, thawed, and 2 Tbsp.

14additional sugar.

15Add in 1 tsp.

16finely shredded lemon peel, if you like.

17Carefully mix in batter.

18Cranberry Muffins: Prepare Basic Muffin batter as above.

19Coarsely chop 1 c. fresh or possibly frzn cranberries; combine with 1/4 c. additional sugar.

20Carefull fold into batter.

21Apple-Raisin Muffins: Prepare Basic Muffin batter as above, EXCEPT stir 1/2 tsp.

22grnd cinnamon into the flour mix.

23Carefully fold 1 c. minced peeled apple and 1/3 c. raisins into batter.

24Jelly Muffins: Prepare Basic Muffin batter as above.

25Spoon 1 tsp.

26jelly atop batter in each muffin c. before baking.

27Date-Nut Muffins: Prepare Basic Muffin batter as above.

28Fold 2.3 c. coarsely minced pitted dates and 1/3 c. minced walnut or possibly pecans into the batter.

29Cheese Muffins: Prepare Basic Muffin batter as above.

30EXCEPT stir 1/2 c. shredded Swiss or possibly Cheddar cheese into flour mix.

31Ham 'n Cheesers: Prepare Basic Muffin batter as above EXCEPT stir 1/2 c. finely minced, fully cooked ham into the egg mix.

32Stir 1/2 c. shredded cheese (2 ounces) and 1/2 tsp.

33dry mustard into the flour mix.

34Bacon Muffins: Prepare Basic Muffin batter as above, EXCEPT cook 4 slices bacon until crisp; drain and crumble, reserving drippings.

35Combine bacon drippings with sufficient veg.

36oil to make 1/3 c. total mix; use in place of the 1/3 c. veg.

38Carefully fold bacon into batter.

39Banana-Nut Muffins: Prepare Basic Muffin batter as above, EXCEPT decrease lowfat milk to 1/2 c.. Stir 1 c. mashed banana and 1/2 c. minced nuts into batter.

40Pumpkin Muffins: Prepare Basic Muffin batter as above, EXCEPT increase sugar to 1/3 c.. Add in 1/2 c. canned pumpkin to the egg mix.

41Stir 1/2 tsp.

42each: grnd cinnamon and grnd nutmeg into flour mix.

43Stir 1/2 c. raisins into batter.

44Apple-and-Spice Muffins: Prepare Basic Muffin batter as above, EXCEPT stir 1/2 tsp.

45grnd cinnamon into flour mix.

46Add in 1 c. minced, peeled apple with the egg mix: stir just till moistened.
-
47Mix 2 Tbsp.

48sugar and 1/2 tsp.
-
49grnd cinnamon; sprinkle mix over muffins before baking.
