  • 2 cups unbleached flour
  • 14 cup granulated sugar
  • 1 tablespoon baking powder
  • 12 teaspoon salt
  • 1 cup milk
  • 13 cup unsalted butter, melted (or 1/3 cup vegetableoil)
  • 1 egg

Directions

    Preheat oven to 400*.

    Grease muffin pans.

    Sift flour.

    Then sift again with sugar, baking powder, and salt into a large bowl.

    Measure milk in a smaller bowl.

    Add melted butter or oil and egg.

    Beat with a whisk or fork to mix well.

    Make a well in center of flour mixture.

    Pour in milk mixture all at once.

    Stir quickly with fork until all flour is moistened.

    DO NOT BEAT OR OVERMIX.

    There may be a few lumps.

    Sisregard them.

    Quickly spoon batter into muffin pans.

    Bake 20-25 minutes, or until tops are golden and a wooden pick inserted in center comes out clean.
