- 2 cups unbleached flour
- 14 cup granulated sugar
- 1 tablespoon baking powder
- 12 teaspoon salt
- 1 cup milk
- 13 cup unsalted butter, melted (or 1/3 cup vegetableoil)
- 1 egg
Directions

1Preheat oven to 400*.

2Grease muffin pans.

3Sift flour.

4Then sift again with sugar, baking powder, and salt into a large bowl.

5Measure milk in a smaller bowl.

6Add melted butter or oil and egg.

7Beat with a whisk or fork to mix well.

8Make a well in center of flour mixture.

9Pour in milk mixture all at once.

10Stir quickly with fork until all flour is moistened.

11DO NOT BEAT OR OVERMIX.

12There may be a few lumps.

13Sisregard them.

14Quickly spoon batter into muffin pans.

15Bake 20-25 minutes, or until tops are golden and a wooden pick inserted in center comes out clean.

16Cool slightly on a rack.

17Turn out and serve warm.
