- 1 cup all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 14 teaspoon salt
- 1 egg
- 1 cup milk
- 2 tablespoons cooking oil
- 1 teaspoon vanilla
Directions

1in a mixing bowl stir together flour, sugar, baking powder and salt.

2in another bowl combine egg, milk, cooking oil, and vanilla.

3add liquid ingredients to dry flour mixture all at once and stir just until moistened.

4mixture will be slightly lumpy.

5use a paper towel to rub a little cooking oil over the griddle.

6set to medium heat.

7heat the griddle.
-
8sprinkle a few drops of water on the griddle.

9if they jump, the griddle is hot enough to use.

10measure 1/4 cup batter for each pancake and pour onto hot griddle.

11when bubbles cover the surface of the pancake and the edges look dry,turn over with a pancake turner.

12cook until golden brown.

13remove pancakes with pancake turner.

14repeat until all batter is used.

15serve with syrup or fruit.
