  • 12 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar (or more) or 3 tablespoons white wine vinegar (or more)
  • salt & freshly ground black pepper
  • 1 large shallot, rough chopped

Directions

    Combine oil, vinegar and salt and pepper in a blender and blend about 30 seconds until emulified.

    Taste and add more vinegar, by teaspoons, if desired.

    Add shallot and pulse until shallot is minced.
