  • 1 spaghetti squash
  • 4 tomatoes large
  • 2 onions minced
  • lean ground meat
  • garlic minced
  • parsley minced
  • salt
  • pepper

    1. Cook the spaghetti squash in boiling water for 45 minutes.

    2. Plunge the tomatoes in boiling water for a few minutes and peel them. Puree them and turn them into a coulis.

    3. Saute the minced onions then add the meat. Add the garlic and parsley. Season with salt and pepper. Add the tomato coulis and continue cooking.

    4. When the spaghetti squash is cooked, divide it lengthwise and scrape out the spaghetti with a fork. Add the spaghetti to the bolognese sauce and serve.
