Basil Cream Pasta

  • 1/2 c. olive oil
  • 4 large cloves garlic
  • 3 c. packed basil leaves
  • 2 c. heavy cream
  • 1 1/4 c. finely grated Parmesan cheese
  • 1/4 tsp. salt
  • dash of pepper
  • 1 lb. pasta (fettucine)

    Blend 1/4 cup

    oil and garlic in blender.

    Slowly add basil and additional 1/4 cup oil until it becomes a fine green paste.

    In saucepan, add cream, basil paste, 3/4 cup cheese, salt and pepper.

    Heat just until hot.

    Cook and drain pasta.

    Toss with sauce and garnish with remaining Parmesan cheese.
