Basil Feta Cake

  • 4 eggs
  • 1/2 cup milk or heavy cream
  • 1/2 cup olive oil
  • 1 3/8 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup feta cheese cut into cubes
  • 10 dried tomatoes cut into strips
  • 1/2 bunch basil chopped

Directions

    Preheat oven to 425 degrees Fahrenheit.

    In a bowl, whisk the eggs gradually incorporating the milk and the oil.

    In a small bowl, combine the flour and the baking powder, and add to the egg mixture.

    With a spatula, gently add the cubes of feta, the tomato strips and the chopped basil.

    Pour into a buttered loaf pan.

    Bake for 35 to 40 minutes. To check if the cake is ready to come out of the oven, use a knife. The blade should come out clean.
