Basil Feta Cake

- 4 eggs
- 1/2 cup milk or heavy cream
- 1/2 cup olive oil
- 1 3/8 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup feta cheese cut into cubes
- 10 dried tomatoes cut into strips
- 1/2 bunch basil chopped
Directions

1Preheat oven to 425 degrees Fahrenheit.

2In a bowl, whisk the eggs gradually incorporating the milk and the oil.

3In a small bowl, combine the flour and the baking powder, and add to the egg mixture.

4With a spatula, gently add the cubes of feta, the tomato strips and the chopped basil.

5Pour into a buttered loaf pan.

6Bake for 35 to 40 minutes. To check if the cake is ready to come out of the oven, use a knife. The blade should come out clean.
