Basil Pesto

Ingredients

  • 2 cups fresh basil, packed
  • 13 cup pine nuts
  • 3 -4 garlic cloves
  • 12 cup olive oil, extra virgin
  • 12 cup parmesan cheese, fresh grated
  • 1 pinch sugar (optional)
  • 14 lemon wedge, seeded
  • kosher salt and pepper, to taste

Directions

    Place basil, pine nuts and garlic in food processor and pulse a few times until chopped.

    While processor is running, stream in olive oil until mixture turns light green and smooth.

    Add parmesan and process.

    Add salt and pepper to taste.

    Squeeze lemon juice into pesto and if you are adding pinch of sugar do so now.

    Process until you reach desired consistency.

    The longer you process, the smoother it gets.

    If you want it to have texture, process less.
