- 2 cups fresh basil, packed
- 13 cup pine nuts
- 3 -4 garlic cloves
- 12 cup olive oil, extra virgin
- 12 cup parmesan cheese, fresh grated
- 1 pinch sugar (optional)
- 14 lemon wedge, seeded
- kosher salt and pepper, to taste
Directions

1Place basil, pine nuts and garlic in food processor and pulse a few times until chopped.

2While processor is running, stream in olive oil until mixture turns light green and smooth.

3Add parmesan and process.

4Add salt and pepper to taste.

5Squeeze lemon juice into pesto and if you are adding pinch of sugar do so now.

6Process until you reach desired consistency.

7The longer you process, the smoother it gets.

8If you want it to have texture, process less.
