Basil Pork Chops

- flour (for dredging)
- garlic salt to taste
- 8 loin pork chops, trimmed
- olive oil
- 2 tsp. chopped fresh basil or 1/2 tsp. dried
- 1/2 c. Marsala wine or apricot or plum juice
Directions

1Preheat oven to 250°.

2Combine flour and garlic salt in bag; add chops and toss lightly until they are thoroughly coated. Brown chops in heavy skillet using just enough oil to cover bottom of the skillet.

3Arrange chops in shallow ungreased baking dish without letting them overlap.

4Sprinkle with basil.

5Cover closely with foil.

6Bake until tender, about 1 1/2 hours.

7Skim off all fat.

8Add wine or fruit juice.

9Remove cover and continue to cook until liquid bubbles.
