Basil Pork Chops

  • flour (for dredging)
  • garlic salt to taste
  • 8 loin pork chops, trimmed
  • olive oil
  • 2 tsp. chopped fresh basil or 1/2 tsp. dried
  • 1/2 c. Marsala wine or apricot or plum juice

Directions

    Preheat oven to 250°.

    Combine flour and garlic salt in bag; add chops and toss lightly until they are thoroughly coated. Brown chops in heavy skillet using just enough oil to cover bottom of the skillet.

    Arrange chops in shallow ungreased baking dish without letting them overlap.

    Sprinkle with basil.

    Cover closely with foil.

    Bake until tender, about 1 1/2 hours.

    Skim off all fat.

    Add wine or fruit juice.

    Remove cover and continue to cook until liquid bubbles.
