- 1/2 c. onion, chopped
- 1 small clove garlic, crushed
- 2 Tbsp. olive oil
- 3/4 c. parsley, chopped
- 1/4 c. pimento, chopped
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 envelope chicken broth or 1 tsp. granulated chicken bouillon
- 1 c. water
- 6 medium potatoes
Directions

1Saute onion and garlic in olive oil in medium size skillet. Stir in parsley, pimento, salt, pepper, chicken broth and water. Remove from heat.

2Reserve.

3Pare potatoes and thinly slice. Layer slices in the broth in the skillet.

4Heat to boiling; reduce heat.

5Cover. Simmer about 20 minutes or until tender.

6Remove potatoes with slotted spoon to heated serving dish.

7Spoon remaining cooking liquid over potatoes.
