  • 2-3 ounces light rum
  • 2/3 cup fresh pineapple, coarsely chopped
  • Superfine sugar to taste
  • 1/2 cup crushed ice
  • Sprig fresh mint

Directions

    Combine the rum, pineapple and sugar in an electric blender and blend on high speed until smooth.

    Put the ice into a goblet and add the liquor.

    Decorate with the mint.
