- 3 c. soybean oil
- 2 lb. fresh cod fillets
- 1 1/3 c. flour
- 1 c. water
- 1 egg
- 2 tsp. sugar
- 2 tsp. salt
Directions

1Heat oil in deep pan to about 400°.

2Cut fish into 7 x 2-inch wedges.

3With mixer, blend flour, water, egg, sugar and salt.

4Dip fish into batter, coating well.

5Quickly drop into oil.

6Fry each fillet until dark golden brown, about 5 minutes.

7Drain on metal rack or paper towels.
