  • 3 c. soybean oil
  • 2 lb. fresh cod fillets
  • 1 1/3 c. flour
  • 1 c. water
  • 1 egg
  • 2 tsp. sugar
  • 2 tsp. salt

Directions

    Heat oil in deep pan to about 400°.

    Cut fish into 7 x 2-inch wedges.

    With mixer, blend flour, water, egg, sugar and salt.

    Dip fish into batter, coating well.

    Quickly drop into oil.

    Fry each fillet until dark golden brown, about 5 minutes.

    Drain on metal rack or paper towels.
