- 1 (2 to 2 1/2 lb.) broiler-fryer chicken, cut up
- 1 c. pancake mix
- 1/2 tsp. salt
- 3/4 c. water
- cooking oil
Directions

1In a covered saucepan, simmer chicken in salted water to cover for 20 minutes; drain.

2In a bowl, combine pancake mix and salt; stir in water.

3Beat 2 minutes.

4Dip chicken in batter; let excess batter drain off into bowl.

5In a heavy skillet that's at least 3 inches deep, heat 1 1/4 inches of oil to 350°.

6Regulate heat so chicken fries, about 325°.

7Fry a few pieces at a time for about 5 minutes or until golden and chicken is tender.

8Drain well.
