Batter-Fried Chicken

  • 1 (2 to 2 1/2 lb.) broiler-fryer chicken, cut up
  • 1 c. pancake mix
  • 1/2 tsp. salt
  • 3/4 c. water
  • cooking oil

    In a covered saucepan, simmer chicken in salted water to cover for 20 minutes; drain.

    In a bowl, combine pancake mix and salt; stir in water.

    Beat 2 minutes.

    Dip chicken in batter; let excess batter drain off into bowl.

    In a heavy skillet that's at least 3 inches deep, heat 1 1/4 inches of oil to 350°.

    Regulate heat so chicken fries, about 325°.

    Fry a few pieces at a time for about 5 minutes or until golden and chicken is tender.
