- 2 lb. uncooked shrimp (large)
- 3/4 c. unsifted flour
- 3/4 c. water
- 1 egg, slightly beaten
- 1 Tbsp. sugar
- 1/2 tsp. salt
- Planter's peanut oil
Directions

1Peel shrimp, leaving tails on; devein.

2Split shrimp partway through, butterfly fashion.

3Combine flour, water, egg, sugar and salt to make a batter.

4Dip shrimp into batter and fry in deep, hot (375°) Planter's peanut oil until golden brown.

5Drain on paper towels.
