Batter-Fried Shrimp

  • 2 lb. uncooked shrimp (large)
  • 3/4 c. unsifted flour
  • 3/4 c. water
  • 1 egg, slightly beaten
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • Planter's peanut oil

Directions

    Peel shrimp, leaving tails on; devein.

    Split shrimp partway through, butterfly fashion.

    Combine flour, water, egg, sugar and salt to make a batter.

    Dip shrimp into batter and fry in deep, hot (375°) Planter's peanut oil until golden brown.

    Drain on paper towels.
