Bay Chicken

Ingredients

  • 2 1/2 lb boneless, skinless chicken thighs
  • 2 cup chicken broth - i use a chicken & tomato bouillon
  • 8 bay leaves
  • 1 tbsp adobo seasoning
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 prepared rice
  • 1 salt & pepper to taste

Directions

    ***Can use 2 1/2 lbs - 4 lbs of boneless or bone-in chicken - your preference *** In a large skillet or dutch oven, combine all ingredients.

    Bring to a boil for and simmer for a few minutes till all broth & spices seem well combined.

    Reduce heat to low.

    Simmer, uncovered, for about 40 to 45 minutes.

    Make sure you keep bay leaves in broth.

    Spoon broth over chicken occasionally & flip chicken thighs once or twice during cooking.

    I always serve this in a pasta bowl.

    I place in a piece of chicken and a few tablespoons of broth in the bowl - then spoon in a serving of rice on top...this way you can eat the rice & broth together but the rice doesn't get mushy.

    This recipe is also wonderful with bone - in chicken.

    I usually bake it covered slow, in a warm oven.
