- 1 1/2 lb. sausage
- 12 eggs
- 3/4 lb. shredded Cheddar cheese (3 c.)
- 1/2 large onion
- green pepper
- mushrooms
- 1/2 pt. cream
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions

1Fry sausage and drain well; grease 9 x 13-inch pan.

2Break eggs into pan and poke the yolks.

3Top eggs with all of the sausage, 1/2 of the cheese and all of the onion, green pepper and mushrooms. Cover all with the cream and the remainder of the cheese.

4Season with salt and pepper.

5Refrigerate overnight.

6Bake in 350° oven for 1 hour.

7Serves 8.
