BBQ Pulled Pork

- 7 pounds Pork Roast
- 1 whole Large Onion, Chopped
- 3 cloves Garlic, Minced
- 3 cups Honey BBQ Sauce (Homemade Sauce Is Best)
- 1 whole Chipotle Pepper In Adobo Sauce, Chopped
Directions

1Rinse and dry roast.

2Place in the bottom of a slow cooker, top with onion, garlic, pepper and BBQ sauce.

3Put the lid on and set on low for 10 hours.

4About 45 minutes prior to serving, remove roast from pan and set aside.

5Pour most of remaining sauce in a saucepan and boil on high heat.

6While the sauce is reducing, shred pork with two forks.

7The roast should practically fall apart.

8When done, put back into the cooker and add the sauce that has been reduced.

9Stir around until well combined.

10Leave on low until ready to serve.
