  • THE SAUCE
  • 2 cups ketchup
  • 1/2 cup cider vinegar
  • 1 tbsp chipotle powder
  • 1/4 cup molasses
  • 1 tsp Tabasco sauce
  • 1 tsp Worcestershire sauce
  • 2 tsp garlic, finely chopped
  • 2 tbsp brown sugar
  • 1/2 tsp ground cumin
  • 1 oz bourbon
  • THE RUB
  • 2 tbsp Montreal Steak seasoning
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1 tbsp freshly ground pepper
  • 1 tbsp granulated garlic
  • 1 tbsp onion powder
  • 2 tbsp sweet paprika
  • 2 tsp chile powder
  • 1 tsp each fresh thyme and rosemary

Directions

    Brush or rub meat with sauce, then roll in rub mixture.

    Wrap in plastic and refrigerate overnight.

    Pre-heat grill to 200 F. Place meat on grill and cook slowly, turning every 15 minutes. Cook to internal temperature of 145 F.
