Bean And Bacon Loaf

- 1 1/2 c. dried lima beans
- 1/2 lb. bacon
- 1 egg
- 1 tsp. salt
- 1/4 c. celery, chopped
- 2 slices dried bread or toast
- 2 Tbsp. peanut butter
Directions

1Soak beans overnight; cook until tender, about 45 minutes. Cook bacon.

2Run beans, bread, celery and bacon through the food chopper.

3Blend with egg and peanut butter; add the fat remaining from the crisped bacon.

4Mold into loaf and bake in slow oven about 45 minutes.

5Serves 6 and is delicious with tomato sauce. The remaining can be sliced and served cold the following day.
