Ingredients

  • 2 c flour
  • 1 tsp baking soda
  • 3 tbsp sugar
  • 1/2 tsp salt
  • 3 eggs
  • 1-1/4 c buttermilk (or 1-1/4 c whole milk plus one tbsp white vinegar left to stand until thickened)
  • 1-1/2 tsp vanilla
  • Optional: chocolate chips or other mix-ins

Directions

    Sift or whisk together dry ingredients.

    Whisk eggs to incorporate air. Whisk in buttermilk and vanilla. Stir dry ingredients into wet ingredients until just blended. Lumps are fine.

    If using mix-ins, put some in bottom of 1/3 c measuring cup and fill with batter. Pour onto hot greased griddle. Flip when dry bubbles form.

    Optional, whisk egg yolks and egg whites separately. Fold egg whites into remaining wet ingredients before adding dry.
