Ingredients

  • 1 medium chopped onion
  • 1 clove of garlic, finely chopped
  • 2 tbsp olive oil
  • 2 cans (16 oz) chicken broth
  • 2 cans (16 oz) diced tomatoes with juice
  • 2 cans (16 oz) white beans with liquid
  • 1 tbsp. dried thyme
  • 1 bag pre-washed baby spinach
  • shredded parmesan
  • salt and pepper to taste

Directions

    Saute the garlic and onion in olive oil in a soup pot until soft. Pour in the broth, tomatoes, and beans. Stir in the thyme, salt and pepper. Bring to a boil. Let simmer, uncovered for 5 minutes. Add spinach and increase heat. Cook until spinach softens. Serve soup topped with parmesan cheese.
