  • 1 2/3 c. cooked, sieved pinto beans
  • 1 1/2 c. cornmeal
  • 2 eggs, beaten
  • 3/4 c. buttermilk
  • 1/2 tsp. salt
  • 1 tsp. baking soda

Directions

    Combine all ingredients, beating just enough to make a smooth batter. Turn into a greased loaf pan and bake 45 to 50 minutes in a 375° preheated oven.

    When top browns and sides pull away from the pan, turn out and cool on a rack.

    Delicious warm with butter.
