Bean Casserole

Ingredients

  • 1 (16 oz.) bag Great Northern beans
  • 1 lb. ground chuck or ground turkey
  • 1/2 c. green pepper, chopped
  • 1 medium onion, chopped
  • 1 clove garlic, chopped
  • 1/2 c. tomato, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 large bag grated Cheddar cheese

    Soak beans overnight or at least 2 hours.

    Rinse and cook until fork-tender.

    Drain.

    Saute or brown ground beef, onions, peppers and garlic; salt and pepper.

    Drain off any excess oil.

    Add tomatoes and tomato sauce.

    In a casserole dish, layer beans, meat mixture and cheese.

    Continue to layer until casserole dish is full.

    Spread topping of cheese on top and bake in 350° to 375° oven for 20 minutes or until cheese is melted.

    Let cool and serve warm or cold.
