Ingredients
- 1 lb. pinto beans
- 3 lb. pork roast
- 7 c. water
- 1/2 c. chopped onions
- 2 cloves minced garlic
- 1 Tbsp. salt
- 2 Tbsp. chili powder
- 1 Tbsp. cumin
- 1 tsp. oregano
- 1 (4 oz.) can chopped green chilies
Directions

1Place all ingredients in a heavy kettle or slow cooker.

2Cover kettle and simmer about 5 hours or until roast falls apart.

3Cook in a slow cooker overnight and all the next day.

4Break up roast into bite-sized pieces.

5Uncover and cook until thick, about 1/2 hour.

6Serve over chips and top with cheese, lettuce, tomatoes, sour cream and more.

7Serves 10.
