Ingredients: Pastry for single pie crust; 2/3 C sugar; 1 envelope unflavored gelatin; 1/4 t salt; 1/2 t lime zest; 1/3 C lime juice; 1/3 C water; 3 slightly beaten egg yolks; 6-8 drops green food coloring; 1/4 C light rum; 3 egg whites; 1/3 C sugar

Pastry for single pie crust
2/3 C sugar
1 envelope unflavored gelatin
1/4 t salt
1/2 t lime zest
1/3 C lime juice
1/3 C water
3 slightly beaten egg yolks
6-8 drops green food coloring
1/4 C light rum
3 egg whites
1/3 C sugar

Bake pie crust at 450 til golden, set aside and let cool. Combine 2/3 C sugar, gelatin, and salt. Stir in limejuice, water and yolks. Cook and stir over low heat til thickens slightly. Remove from heat, stir in zest, tint with food coloring. Cool slighly, stir in rum. Chill to consistency of corn syrup, stirring occasionally. Remove from refrigerator. Immediately beat egg whites til soft peaks form. Gradually add 1/3 C sugar, beating to stiff peaks. When gelatin is the consistency of unbeaten egg whites, fold in stiffly beaten egg whites. Cihll til mixture mounds when spooned. Turn into baked pastry shell. Chill several hours or til set. cover, chill to serve.
